Simplified Vegan Pulled “Pork” Recipe with Lion’s Mane Mushrooms

Ingredients:

  • 1 pound lion’s mane mushrooms
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1/2 cup barbecue sauce (vegan-friendly)
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon apple cider vinegar
  • Salt and pepper to taste
  • Hamburger buns or rolls, for serving
  • Coleslaw or pickles, for serving (optional)

Instructions:

  1. Shred the lion’s mane mushrooms into long, thin strips resembling pulled pork using your hands or a fork.
  2. In a large nonstick pan, heat about 1/2 tablespoon of cooking oil over medium-high heat, when it’s hot, toss in the shredded mushroom.
  3. Leave the mushrooms to brown on one side before flipping, about 3-4 minutes per side.
  4. When mushrooms are golden brown, turn off the heat and let cool slightly, then pour in the BBQ sauce, heat over medium heat till the sauce thickens and mostly absorbed.
  5. Taste and season with salt and pepper as desired.
  6. Once the vegan pulled “pork” is ready, assemble your sandwiches by placing the mixture on toasted hamburger buns or taco shells
  7. Serve the vegan pulled “pork” sandwiches hot, and optionally top with coleslaw or pickles.
